Sweet and Red Potato Salad

I love potato salad. It’s an essential BBQ side, which is a bit strange considering that my mum went to great lengths to avoid potato salads when I was growing up. Maybe it’s this lack of potato salad in my house that makes me relish this dish so much. However, in my mum’s effort to avoid the traditional mayonnaise drenched and oftentimes flavorless potato salad, she created a sweet potato and red potato salad that is colorful, flavorful, and all together fantastic!

 

Serves 15

 

Salad:

 

1/2 cup celery

1 cup red onion

1 cup red bell pepper

1 cup pea pods

1/2 cup cilantro

2 lbs red potatoes

2 lbs sweet potatoes, peel and cooked

 

Dressing:

 

1/2 cup lime juice

zest of one lime

6 tablespoons olive oil

2 tablespoons salt

1/2 tespoon black pepper

4 teaspoon chipotle chili, with the seeds removed

 

Method:

 

Dice celery, red onion, red bell pepper, pea pods and cilantro, set to one side.

Put all dressing ingredients in a blender and blend until emulsified, pour the dressing over warm, chopped potatoes and add the res of the diced ingredients. Done! All it takes is a little prep work and boiling some potatoes for a great alternative to the traditional potato salad!
