Not-nola: Grain-free granola

If you’re like me, you miss cereal. you miss that satisfying crunch mixed with the cool freshness of milk. Something quick and easy to eat on mornings you need to get out the door a little faster, or just don’t feel like cooking something nutritious. But cereal is hardly nutritious, it’s anything put. Most cereals are sugar filled, gluntenous gut bombs. While they don’t really poison everyone, nobody benefits from a bowl of Special-K for breakfast. But this Not-nola is just that, it’s not poison, it’s not sugar-filled, and it definitely can be served with some freshly poured milk.

 

What you need:

Preheat oven t0 300 degrees

food processor

mixing bowl

spoon

cookie sheet

 

Ingredients:

one large banana

1 cup of dates

1/2 cup of macadamia nuts

1/2 cup of cashews

1 cup hazlenuts

1/2 cup of sunflower seeds

1/2 cup of pepitas

1/4 cup chia seeds

1/4 cup flax meal

1/2 Hemp protein powder (or a protein powder of your choice

1 cup shredded, unsweetened coconut

1 tablespoon cinnamon

1 teaspoon nutmeg

1 tablespoon vanilla

 

Method:

Blend banana and dates in food processor until they form a smooth paste, transfer to mixing bowl. Add all other ingredients and mix vigorously. Seriously, my forearm was a little tired by the time I had mixed all of my nuts, seeds, coconut and spices evenly! Spread out evenly onto a cookie sheet. Place in oven for 20 minutes, then remove, stir granola, and put back in the oven for another 15 minutes. Keep an eye on the granola to make sure you get the nuts roasted perfectly but don’t burn them.

 

Bonus: Roasted hazelnuts smell amazing.

 

I serve mine with So Delicious Coconut milk, lactose free plain yogurt and whatever fruit I have on hand!
