Crock Pot Flank Steak

Have I told you how I love crock pots? I wish I could say my crock pot, but sadly, it’s on loan! I do need to return it which means, I MUST buy a crock pot. How did I ever live without one? I can just put  veggies and a large piece of meat in it and leave. I can go wherever I want and when I come home, no doubt starving, dirty, and tired, my dinner will be done! Amazing!

 

I’ve  been taking full advantage of the crock pot,  pork shoulder and bone broths have been coming out of my kitchen weekly. However, Health Bent’s Ropa Vieja recipe has been in my Evernote for a couple months, and I was inspired by the pretty photos.

My flank steak wasn’t really ropa vieja at all, but it was still delicious!

 

What you will need: 

Crockpot

Maybe a measuring cup if your feeling a little  type A today

 

Ingredients:

1 pound of flank steak

1 cup of bone broth, I used beef because I had it, but you could use chicken too

1/2 onion

4 garlic gloves

1 can diced tomatoes

Juice of one lime

cumin, ginger, salt, and pepper to taste

 

Methodology:

Put everything in the crockpot, turn it on at the 8 hour setting, go play, and come back hungry! Shred the flank steak with two forks before serving.
