A Lazy breakfast (that was fast and easy)

I bought Paleo Comfort Foods for Jamon’s mom and step-dad for Christmas, I didn’t even have a chance to look through all the recipes (shhhh) but the picture of this one stuck with me. I didn’t grow up with eggs in a basket, but I can clearly remember the first day I saw Jim making them, I must of been 16. Wait, fry the egg in a whole in the middle of bread? That’s awesome! Ok, I know it’s just fried bread and egg, but it just makes it so much more exciting when it’s prepared like that. Clearly, bread is out this month (well, pretty much forever), so Bill and Haley‘s version from their cookbook inspired me. Egg in an eggplant basket. Genius!

What you will need:

Frying pan

Spatula

 

Ingredients:

Olive oil or coconut oil

4 slices of eggplant, from the fattest part of the vegetable. Cut holes out of the middle.

4 eggs

salt and pepper to taste

 

Methodology:

Warm up the oil in the saucepan at a medium heat, sear the eggplant for about 2 minutes then flip over. Crack an egg in each of the holes you cut out of the eggplant. After the eggs have started to set, flip the eggplant again to cook the other side. Sprinkle with salt and pepper and serve!

 

We ate this over a bed of sauted bok choy, garlic, and onions. I added a dash of sesame oil and cumin to flavor the bok choy.
